If you can find a whole-wheat pancake mix, use that--if not, bisquick or another boxed pancake mix is fine.

Prepare the mix according to the directions. Most mixes will require more milk added than the recipe states--don't add more, just put the exact recipe quantity. Use the 2 cup quantity for this recipe (you can adjust if you're feeding more people), which states it makes about 14 pancakes.

Add one whole can of peaches packed in juice (not sweetened), and one whole banana. Add about 2 Tablespoons of brown sugar, a dash of cinnamon, and a 1/2 teaspoon of vanilla.

Using a wire wisk or dough cutter, chop the fruit up in the mix, and combine thoroughly. If necessary (it usually won't be), add more milk to get the correct batter consistency. Fold in 1/2 cup of chopped walnuts.

Using a ladle tends to make perfect-sized pancakes. Use a slightly lower than usual heat, as these pancakes sometimes tend not to cook through if you don't cook them for a while. Make sure your batter is fairly thin to help combat this problem. Brown well on both sides.
You can serve with powdered sugar or maple syrup, but it isn't necessary to do so.

You can substitute other fruits for the peaches and bananas if you want to--soft fruits work best. If you use harder fruits (such as apples), you should finely dice them before adding them to the batter. If you use dried fruits, I recommend soaking them in water for 1/2 hour to an hour before using them, to rehydrate them and make them softer.

If you have a blender or food processor, you can add all sorts of thing and just give a good buzz on puree.

I recommend sticking to soft or canned fruits if you're in a hurry, as you can put these pancakes together in little more time than it would take to make the boxed mix alone.
